It was 2017 when Trattoria Pennestri was born in Rome, a restaurant project that Valeria Payero and Tommaso Pennestri had been thinking about for some time. Grown up for over twenty years in the sector, Tommaso in the kitchen and Valeria in the dining room and cellar have used their experience to give life to a new concept of a trattoria, which puts the customer and his time at the centre. In the kitchen, Tommaso draws on his childhood memories, processes the stimuli from the external context and studies with dedication and perseverance to find that balance between tradition and innovation, which is today fundamental for catering: space, therefore, for some of the most renowned dishes of the Roman tradition and also space for innovative combinations, generated by continuous study work.
